LEMON MYRTLE MADELEINE
Madeleines with Lemon Myrtle and bits of Candied Citron, coated in White Chocolate
Chef spent the early days of his journey in Australia, where he found a love for the unique flavour of the Native bush herb Lemon Myrtle. Here, it pairs perfectly with white chocolate and the nutty, buttery fragrance of the Madeleine.
CARAMELISED APPLE STROOPWAFEL
Traditional Stroopwafel filled with Caramelised Apple Toffee.
Often spotted as common gifts at the European airports or at the markets in Holland, the simple stroopwafel soon became one of Chef’s favourite snacks, mainly due to the simple but complex flavours and he just had to recreate his version.
ISPAHAN PATE DE FRUIT
Raspberry, Rose & Lychee Fruit Jellies coated with Moroccan Rose Petals
Inspired by the pastry great Pierre Herme, this classic flavour was always going to be so harmonious together. Repeated layering allows you to enjoy each flavour on its on, or altogether.
CALISSON
Traditional French Boat Candy, Rockmelon and Almond Frangipane tart, scented with Orange Blossom and topped with Fondant
First introduced to Chef not in France, but in Singapore by Chef Andre who was practically half-French, the Calisson is one of the simplest but most delicious bites with such a unique history dating back to the 12 century.
CHOCOLATE COOKIE
Dark Chocolate Cookie with Milk, White and Caramelised White Chocolate Chips.
When Chef was in America, he was constantly on the search to find the best cookies, whether at Milk Bar, or just freshly baked at the neighbourhood bakery.
Here we have an all time favourite of Chef’s creations, an overloaded Valrhona chocolate cookie that we couldn't stop snacking on ourselves.
BROWN SUGAR PALMIER
Caramelised Puff Pastry with hints of Vanilla and Molasses
This traditional cookie is the closest one could get to Chef’s best selling Kouign Amann since the early days, now in this bite-sized and travel friendly version ;)
